Cheesy Chicken & Veggie Pasta

I have been trying to find some new ideas for what to feed Elise.  I'm trying to move on to more chunky stuff, but she's kind of "lazy" when it comes to having to "chew" up food.  She only has 2 teeth so she still prefers purees.  I also wanted a kind of "one dish meal" so I came up with this...

 The Ingredients include:
  • 1 boiled chicken breast
  • Broth from boiled chicken
  • 1/4 pkg. of wide egg noodles
  • 1/4-1/2 pkg of mixed veggies
  • Cheese (optional)

I cooked the chicken, noodles, and vegetables and threw everything in the food processor.  I added some broth to get the right consistency. 

I also decided to grate up some Colby Jack cheese.... just because everything's better with cheese!!


So all in one meal you have: protein, veggies, dairy, and carbohydrates.

Elise LOVED it!  It freezes well too.  I filled up an ice cube tray with everything out of the food processor.  So, now I can just pull out a couple cubes when I'm ready to feed her and toss it in the microwave.  I microwave all of my homemade food cubes thirty seconds per cube.


Maybe I will start sharing more of my homemade baby food success stories if I have anyone that's interested in learning more.
